World meals: Sushi

Hi guys!
Today, I will speak about one of my favorite meals, the Sushi or 寿in Japanese, one of the main traditional of Japanese cuisine.
One of the first references of Sushi was in 718, when this meal used to pay taxes. From 1500 approx to the last part of XIX century, it changed progressively to arrive to our days as a traditional Nippon dish. In that century, Japanese people started to eat three dishes per day; this is an important vision of the national economy. In these years, the rice was boiled and not steamed like it is nowadays. Another important thing is the invention of the rice vinegar and the dimensions of each piece of sushi, it was more or less the double that it is nowadays. Nevertheless, Japan people ate it using their hands or chopsticks.
In the next century (XXth), the Sushi was exported around the world; the main reason was the improvement of the refrigeration in the transports.
The Sushi is eaten mainly with soy sauce and wasabi, there are a lot of types, the most important around the world are makizushi and nigirizushi, the first is done with nori (a type of alga), but, there are more like: oshizushi, inarizushi, chirashizushi or narezushi.
I recommend you to taste it and do it! I know one of the best Sushi Chef in Catalonia called Redox. When will I eat more Sushi made by him?? I hope I will eat it soon!
